The Disciplinary of sweet and spicy Gorgonzola PDO
There are two types of Gorgonzola – Sweet and Spicy – with precise characteristics and methods of preparation scrupulously regulated by the Production Regulations, issued by the Consortium for the Protection of Gorgonzola Cheese, implemented by the MIPAAF (Ministry of Agricultural, Food and Forestry Policies) and recognized by the European Community.
Each wheel is marked at the origin with the indication of the manufacturer; moreover, Gorgonzola, to be sold as such, must be wrapped in aluminum foil bearing a particular relief of small
printed on the entire sheet: without the Consortium’s logo it is not Gorgonzola.
A designated body is authorized by the Ministry of Agri-Food Policies to control these requirements among producers. Only the cheese considered suitable is issued the certificate of conformity, which allows the marketing of the Gorgonzola protected designation of origin product. The portions in trays must have the symbol of the Gorgonzola Consortium with the authorization number issued to the producer and packager, a guarantee of quality.
