Slice the onions very thinly. Peel the potatoes and grate them on a grater with large holes. Grate the Montasio cheese as well. Heat two tablespoons of oil in a pan and sauté the onions; when golden, add the potatoes and cheese, season with salt, and mix well.
Cook for about 15 minutes. Heat a tablespoon of oil in a nonstick pan. Pour in half the potato, cheese, and onion mixture, smoothing it out with a spatula, tamping it down firmly. Arrange the chopped Gorgonzola Dolce Igor on top and cover with the remaining mixture. Smooth it out evenly with the spatula.
Cook over high heat for a few minutes on both sides to create a crispy crust.
Serve the frico piping hot.
