Start by preparing the salmon, check if the fillet is perfectly clean or has some bones, then cut it into cubes to obtain a coarse tartare.
Season the salmon with soy sauce, cover with plastic wrap and let it marinate in the refrigerator for about an hour.
Cut both the spicy Gorgonzola and the avocado into cubes, wash the cherry tomatoes and cut them in half.
Take two bowls, and arrange the various ingredients: quinoa, salmon, avocado, cherry tomatoes and cubes of Igor Spicy Gorgonzola.
Season with extra virgin olive oil, soy sauce and a pinch of salt. Sprinkle with sesame seeds and serve.
