Cut the celery into small pieces. Sauté the celery in a pan with extra virgin olive oil, salt and pepper.
Blend with water and continue cooking.
Blend the celery cream, adding some sugar.
Return the mixture to the pan to thicken it to the right point.
Create a burger disc with the minced veal, onion, salt and pepper.
Cook the burger in a pan with a drizzle of oil.
Melt the Gorgonzola Dolce Igor on the burger and chop the pecans.
Assemble the burger by cutting the bun in half, placing the celery cream on top first, followed by the burger, and finally the walnuts.
