Wash and dry the figs thoroughly. Cut them into quarters, cutting them completely open, and carefully peel them open.
Take Igor’s spicy Gorgonzola and cut it into small cubes.
On a serving platter, arrange the prosciutto slices in a circular pattern to form two roses. Place a fig inside each rose.
Fill the inside of each fig with cubes of spicy Gorgonzola, garnish with chopped walnuts and fresh thyme leaves.
Finish the dish by decorating with a drizzle of acacia honey.
