In a bowl, mix about 2 tablespoons of bell pepper, the very finely chopped garlic, a teaspoon of hot red pepper flakes, and the vinegar until you get the consistency of a sauce. Dip the pork chops in the resulting spicy sauce, coating them evenly. Place the ribs covered with spicy sauce on a baking tray and cook them in the oven at 180°C for about 50 minutes. Halfway through cooking, sprinkle the meat with vinegar and if you see that it is drying out too much, cover it with aluminum foil.
While the meat is cooking, prepare the Gorgonzola Dolce Igor sauce to accompany it; dice the Gorgonzola Dolce Igor. Heat the cream and whole milk in a saucepan and then add the cubes of Gorgonzola Dolce Igor, melting them with a whisk. Serve the meat with Igor’s Sweet Gorgonzola sauce.
