In a bowl, whisk the eggs with 4 tablespoons of extra virgin olive oil. Add the sifted flour and baking powder, then mix in the milk, grated cheese, and saffron.
Cut the spicy Gorgonzola into cubes and fold it into the batter. Season with salt and pepper and add the finely chopped rosemary. Line a loaf tin with baking paper and pour in the mixture. Sprinkle the top with chopped walnuts.
Bake in a preheated oven at 180°C (350°F) for 40–45 minutes.
