Marinate the anchovies with orange juice, fennel and olive oil for 2 hours.
Melt the gorgonzola with a spatula in a KitchenAid until creamy, fill a pastry bag
Warm up the piadina in the oven at 160°C for about 2 minutes, then stuff with gorgonzola mousse, salad and lay on
top the marinated anchovies, season with a drizzle of the marinade, fold and enjoy!
