Tacos with Gorgonzola, salad and marinated anchovies

INGREDIENTS

5 piadinas
100 g of mixed green salad
10 split anchovies
1 orange
80 g extra virgin olive oil
400 g of Gran Riserva Igor Gorgonzola cheese
1 sprig of fennel

Another tasty recipe from Tuttofood 2013, with an international touch.

Preparation

Marinate the anchovies with orange juice, fennel and olive oil for 2 hours. Melt the gorgonzola with a spatula in a KitchenAid until creamy, fill a pastry bag Warm up the piadina in the oven at 160°C for about 2 minutes, then stuff with gorgonzola mousse, salad and lay on top the marinated anchovies, season with a drizzle of the marinade, fold and enjoy!
