Boil the wine, sugar, cinnamon, cloves and lemon rind in a saucepan. Then add the whole peeled pears. When the pears soften remove them from the wine and let the latter cook until it thickens. Let the pears cool and carefully scoop out the centre. Mix the gorgonzola, mascarpone cream cheese and honey in a bowl. Fill the pears with the cream and place on a plate with the wine sauce.
